Ingredients

  • 3 lbs fresh tri colored cheese tortellini
  • 2 cups cherry tomatoes, halved
  • ½ cup thin sliced red onion
  • 12 oz fresh mozzarella pearls
  • ½ cup fresh basil, chiffonade

Creamy Pesto

  • 1 cup packed basil
  • ½ cup grated parmesan
  • 2 garlic cloves
  • ½ cup olive oil
  • 2 tbsp lemon juice
  • Salt to taste

Dressing

  • 1 cup mayonnaise
  • 2 tbsp lemon juice
  • 2 tbsp chopped chives
  • 2 tbsp chopped parsley
  • 1 small garlic clove
  • Salt & pepper

Method

1.        Cook tortellini in salted water. Drain and cool.

2.        Blend pesto ingredients smooth.

3.        Blend Green Goddess dressing until creamy.

4.        Toss pasta with pesto first, then fold in dressing (start with ¾ and adjust).

5.        Fold in tomatoes, onion, mozzarella, basil.

6.        Chill 1–2 hours before serving.
