Chicken

  • 10 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • Salt & pepper to taste

Honey Bourbon Glaze

  • ½ cup bourbon
  • ½ cup honey
  • 2 tbsp Dijon
  • 1 tbsp apple cider vinegar

1.        Simmer 5 minutes.

Roasted Peach Chutney

  • 6 peaches, diced
  • ½ red onion, diced
  • ¼ cup brown sugar
  • ¼ cup apple cider vinegar
  • ½ tsp red pepper flakes

1.        Roast 400 degrees F 20 min, then simmer 10 min.


Preparation:

1.        Grill chicken 6–7 min per side.

2.        Brush glaze during last 2 minutes.

3.        Spoon chutney over top.
